Preheat broiler.
Lightly brush food with oil and season with salt, pepper, and any other herbs or spices.
to control cooking time, adjust the distance between food and heat source by lowering or raising the oven rack on which your broil pan is resting. Once the first side is browned, flip the food items. The second side will cook faster since the food is partially cooked.
Watch closely and remove when the second side is browned.
